How does the reverse-time calculator work?+
Enter your desired dinner time and we calculate backwards: stall buffer + rest time + active cook time. You get an exact start time so your brisket is ready when guests arrive — not 2 hours late.
What is the stall, and why does the calculator include a buffer for it?+
The stall is a plateau around 155–170°F where moisture evaporates from the meat's surface, cooling it as fast as the smoker heats it. It can last 2–4 hours. Our calculator builds in a stall buffer (shown as a range) so you're not caught off guard.
Why does the estimate vary by smoker type?+
Different smokers run at different efficiencies. Kamados and drum smokers retain heat better and cook faster; offset stick burners have more airflow and typically run slower. Each smoker type has a verified modifier applied to the base time.
How accurate are the cook times?+
Cook times are based on verified community data and adjusted per smoker type. Expect ±15% variance depending on your specific setup, meat thickness, and ambient temperature. Always cook to internal temperature, not time alone.
Why should I rest the meat after pulling it?+
Resting allows juices to redistribute through the meat. Skip the rest and you'll lose a puddle of juice on the cutting board instead of keeping it in every slice. For brisket, 60–90 minutes rest is not optional — it's part of the cook.
Can I use this calculator for multiple meats at once?+
